PUMPKIN PIE

                


GOOD EVENING HALLOWEENIES!


In true Halloween spirit, I've been experimenting with some pumpkin recipes and I have discovered the easiest pumpkin pie recipe I have ever came across using fresh pumpkin and it tastes quite delightful. Pumpkin is a strange flavour and some may not like it, however, it is handy if your having guests over in the autumn months or if you're going all out and are throwing a halloween party!

Ingredients:

1 large pumpkin (flesh scooped out and deseeded)

2 large free range eggs

1 can of evaporated milk

3/4 cup of white sugar

1/4 cup of brown sugar

1/4 cup icing sugar (plus additional to dust)

2 tsp cinnamon

2 tsp nutmeg

2 tsp vanilla

1 1/2 tsp ground gloves

1 tsp ginger

1/2 tsp salt

Method: 


Step one: Pre-heat oven to the recommended temperature for the pie crust. Place pie crust in oven until fully cooked

Step two: In a large saucepan, add boiled water to your pumpkin flesh and boil until soft. Usually, this takes roughly 25 minutes. Then once soft, mash to a pulp or mashed potato like texture

Step three: In a large bowl, whisk your 2 eggs with a kitchen aid, hand whisk or fork (it is totally your choice). Add pumpkin and remaining ingredients and mix until fully blended to a smooth texture. Pour into pre-cooked pie crust

Step four:
Bake your pie in oven for 15 minutes. Then, reduce your oven temperature to allow pie to cook for a further 45-50 minutes without over cooking and burning your pie crust. Insert a skewer partially into the centre of pie at regular intervals until it comes out completely clean. Once completely clean, remove from oven (safely!) and allow to cool on wire rack


Step five: Serve with ice cream (vanilla is my person preference) or on its own with icing sugar dusting
